I am paying the standard arm/leg rate for my son to be in the Culinary Arts program at Schoolcraft College. He, his mother, and I are all extremely pleased with the program, which is widely respected, and deservedly so. I just asked him about this matter, and he verified that there is a class devoted to chocolatiering. (As a chocolate FIEND, I can barely wait.) The college is at 6 Mile & Haggerty. If the location is not prohibitively inconvenient, I urge you to give them some serious consideration.

MCC Center Campus has a culinary curriculum, also.

Ravine, perhaps if your son learned a recipe for preparing a truly delectable 'possum stew, you might change your mind about opossums.:-)

My office shares the parking lot with Schoolcraft ... they've got a great cafe in the school, so if you're a desertaholic (as I am) it's worth a visit. Can't remember the name of the place, but it's very nice.
